Stir Up Supper with Jenn Hobby - a daily dinner idea! 

 
Sloppy Jane! Perfect for a Friday night in!
Recipe From Redbook By Barbara Chernetz & Real-Life Notes from Jenn Hobby
 
Ingredients:
1 tablespoon canola oil
1 cup chopped scallions (that's green oinions)
1 cup chopped yellow and orange bell peppers ( or red!) 
1 tablespoon garlic paste
1 pound ground turkey or ground chicken 
1 can(s) (14 1/2-ounce) fire-roasted diced tomatoes
2 tablespoon(s) Worcestershire sauce
1 chipotle chile in adobo sauce, chopped (find in canned aisle)
1/2 teaspoon(s) salt
4 piece(s) cornbread or 4 toaster corn cakes, halved
1 tablespoon red wine vinegar
1/4 cup chopped fresh cilantro
 
Directions:
In a large nonstick skillet, heat oil over medium-high heat. Add scallions and bell peppers and cook, stirring constantly, 2 minutes. (Note 1) 
 
Add garlic paste and cook, stirring constantly, 1 minute.
 
Add turkey (or chicken) and cook, breaking it up with a wooden spoon, stirring until no longer pink, 3-5 minutes. 
 
Add tomatoes and their juices, Worcestershire sauce, chipotle chile, and salt. Reduce heat to medium, stir and cook, covered, 3 minutes. (Note 2) 
 
Meanwhile, toast cornbread or corn cakes.
 
Stir vinegar and cilantro into turkey mixture.
 
Spoon 1/2 of the Sloppy Jane mixture over 4 slices of cornbread, dividing evenly. Repeat with the remaining Sloppy Jane mixture and cornbread. (Note 3)
 
Notes:
1. The orange and yellow peppers are tasty, but if you can only find red, those will be great. You can also use green peppers if that's all you've got!
 
2. You could also make this dish even more Southwestern by adding black beans. Canned are the easiest, just be sure to rinse and strain them. Add them at the end of cooking, so they don't get too soft. 
 
3. Sprinkle with your favorite cheese to be extra indulgent. You could even put your Sloppy Jane on a baking sheet, sprinkle with cheese and broil quickly in the oven to melt the cheese to bubbly. Keep an eye on it though - broil equals BURN too often in my kitchen. No ADD allowed when the broiler is on!
